I forgot. For good testing the bundle you need move your gtk-osx
installation.
I do these before testing : mv ~/gtk gtk.ORIG and after for working
with gtk-osx I go back with mv ~/gtk.ORIG ~/gtk.

Then, if something goes wrong, you can launch the app in the console :
path-to-bundle/Grisbi.app/Contents/MacOS/Grisbi
