I do not doubt that you have a bug but I can not understand how copying the file
of grisbi in a directory of W10 can change its contents.

Could you do :
create a new category and save it
open the file with gedit for example
find the number of new category it's the last line begin by 	<Category Nb="xx" 
where xx is the number of category
copy the file in a directory of W10 
open the file with notepad++
verify the number of the new category create with linux
